Simple, delicious and unique, these cookies are perfect with coffee and tea or when you just want something sweet to nibble on.
They harden on the outside after baking so don’t worry about their seemingly soft set up when you remove them from the oven.
The result is crisp outside cookie shell, and soft, macaroony center.
- 2 1/2 cups of almond meal
- 1/2 to 3/4 cups of sugar (depending on your taste)
- Zest of 1 lemon
- Juice of 1/2 lemon
- 1 egg
Combine ingredients and mix to create a ball of dough. Let rest in the refrigerator for 10-12 hours.
Pre-heat oven to 350 F. After resting, pinch off small lumps and roll into a ball. Place on parchment paper. Once all the balls are shaped, sprinkle with sugar if you would like. Add almonds or pine nuts on top. Bake for 8-10 minutes. Remove from pan and cool.
